CHOCO TEC 2016 presents international experts

 

This year’s CHOCO TEC business forum will be held from December 6th to 8th at the KoelnMesse Congress Center North in Cologne, Germany. The fair will once again feature a broadly international panel of experts from the industry and research sectors.

The themes at the three-day event will range from the development of new fat crystallisation testing procedures to the influence of blooming due to storage conditions for filled chocolate, to the significance of chocolate’s flow properties for process control and more.
Almost half of this year’s speakers are not from Germany and are coming to the fair from countries including the USA, Great Britain, Ghana and Vietnam. This underscores CHOCO TEC’s claim to bring together the latest trends and developments from the widest variety of scientific and business segments.
CHOCO TEC attendees can look forward to speakers including Richard Scobey, President of the World Cocoa Foundation in Washington DC. In his position he assesses the chocolate industry’s global commitment to sustainability in the cocoa sector and has developed a strategy known as “Cocoa­Action” which he will speak about at the 2016 CHOCO TEC.

Half-German, half-Indian Devashish Makarand Tikekar is the Key Account Manager at Barry Callebaut Deutsch­land GmbH. He will discuss the Asian chocolate market and its demands.

Prof. Dr. Emmanuel Ohene Afoakwa from the Uni­versity of Ghana spe­cialises in the pain-relieving and antiradical effects of chocolate and cocoa, which he will discuss at ZDS event in Cologne.
Other interesting presentations are scheduled by Prof. Dr. Malcolm Povey from the University of Leeds who will discuss foreign particle recognition using ultrasound spectroscopy, Prof. Dr. Saskia van Ruth from Wageningen University and Research in the Netherlands will speak about the proof of origin for cocoa beans and Prof. Dr. Thomas Hocker from Switzerland’s ZHAW University in Winterthur will address the controlled cooling of cocoa butter. This year’s CHOCO TEC will also feature the largest scientific poster exhibition in the forum’s history.
