CasaLuker: Panela – a raw sugar with caramel-like flavour

CasaLuker introduced at FiE in Paris Panela, a non-refined raw sugar made from dehydrated cane juice with no added chemical substances. The new product is traditional in the Colombian and Latin American markets, but new for Europe, the US and other parts of the world. The company also launched four new couvertures with Fino de Aroma cocoa made using panela.

In contrast to refined sugar Panela keeps its natural caramel-like flavour and nutrients, such as vitamins and minerals. Whereas sugar only contains sucrose, panela has sucrose, glucose and fructose. It can be used e. g. for chocolate making and confetionery and for industrial use as a sweetener.
