Semi-candies orange and lemon – an exclusive and patented process of Boiron Frères

For more than 40 years, Boiron Fréres SAS has been selecting and carefully processing the best fruit grown in the finest regions around the world specifically for the most demanding professionals.

The brand Les vergers Boiron offers red fruits, fruits of the orchard, citrus fruits and tropical fruits in their complete range of frozen fruits, fruit purees and fruit coulis. According to the company, Les vergers Boiron is the global leader in frozen fruit and vegetable purees and coulis with more than 12,000 tons of products sold each year in 75 countries. Success factors are: strict selection of the best raw materials, controlled assembly techniques inherited from champagne production, processing adapted to each fruit and vegetable, in the ultra-modern plant in Valence.
“Our intense and 100 % natural products will make the difference for our customers,” explains owner and CEO Alain Boiron. “Our mission is: to contribute to the success of food professionals, in savoury, sweet and beverage applications, with a product line constantly tailored to their requirements. And our experts assemble these fruits and vegetables, harvested at maturity, using techniques inherited from the champagne sector. Their know-how guarantees authentic and consistent taste, colour and texture. Driven by this mission, we select the best ingredients, in the best localities, worldwide.”

A soft texture with a powerful, fresh taste
At the iba 2015 in Munich, Boiron showed the latest innovation, with an exclusive and patented process and an unrivalled product: semi-candied orange and lemon. The semi-candied fruits are frozen preparations, obtained by concentrating the juice and candying citrus fruit peel at a moderate temperature. “A simple yet marvellous way to breathe new life into pastry, viennoiserie, cake as well biscuits, ice cream or chocolate. Customers will be convinced of the soft texture with a powerful, fresh taste, typical of citrus fruits, which is intensely fruity and significantly less sugary than traditional candied fruits, the company said. Alain Boiron added: ”Your clients will fall in love.”
In 2010, to extend and establish themselves durably in their environment, Les vergers Boiron grouped together their headquarters and production plant at a new site in Valence, at the heart of one of the largest orchards in France and right next to road and rail infrastructure. This was a key step in the company’s development, representing a property investment of € 13 m and giving the possibility of doubling production capacity.
