Döhler has been a supplier to the food industry since it was founded, especially in the baked goods and confectionery segments. Since 2000, the focus has been much more on the beverage and dairy products segments. Now the company intends to use its expertise in system solutions increasingly in the confectionery industry once again.

Döhler already offers a large and constantly growing portfolio of natural colours, flavours, malt extracts, purees, juice concentrates, sweeteners and natural extracts such as tea. In addition to this portfolio, Döhler also provides its customers with an integrated solution approach that includes services such as market intelligence, trend monitoring and Sensory & Consumer Science for the development of new products.

During development, the spotlight is always on the naturalness of the ingredients. Consumers are now increasingly paying attention to natural ingredients even in the confectionery segment. The origin of Döhler's business today lies in fruit and vegetables. The company has been producing natural juice concentrates, purees, flavours and colours from fresh fruit and vegetables around the world for over 50 years. The “Natural Food & Beverage Ingredients” positioning has therefore been Döhler's promise to its customers for many years and is also an integral part of the company's logo.

Thanks to the rising demand for natural food, colouring concentrates and natural food colours are also becoming increasingly important in the confectionery segment. Using colouring concentrates and natural food colours is far more challenging and complex than using artificial colours, requiring expertise in both the raw materials and the end product to be coloured. In addition, the use of colouring concentrates and natural colours that are easier to process thanks to easy solubility is essential for confectionery such as hard boiled candies and fruit gums. In addition, the colours need to be heat-resistant in order to guarantee even natural colouring, while also being light-stable to prevent bleaching. Döhler offers a broad colour spectrum of colouring concentrates, stretching from yellow, orange, red and purple to green, brown and blue. This variety makes hard boiled candies, fruit and foam gums into colourful, natural and sweet temptations that remain colour-stable, bright and attractive to consumers throughout their shelf life and beyond.

High temperatures and high Brix ranges in the production of hard boiled candies, fruit and gummy sweet masses really put the taste through its paces! Döhler's range of flavours that meet these requirements is huge and extends from fruity, brown and white flavours to extraordinary and exotic taste creations. Just like in other segments in the food industry, trends from the beverage industry spill over into the confectionery industry and provide innovative ideas for new taste experiences here. To meet this trend, Döhler has used its unique position in the beverage segment to develop a range of flavours specifically for the confectionery industry. The flavours of popular trend beverages will therefore provide refreshment in the confectionery aisles in future, too. At the autumn trade fairs, Drinktec and Anuga, visitors to the Döhler stand already had the chance to be inspired by many of these new flavours (e.g. sweets with tea taste and gummy bears with a beer or malt taste).

Great strides are being made in Darmstadt in developments for the confectionery industry. Many new taste innovations can be expected from Döhler this year.
